pointed me here. :o) And I have this WONDERFUL soup recipe from an olllld vegetarian book I thought I'd share. I made it last night and it smells and tastes FABULOUS!2 cups dried lentils
8 cups of vegetable broth (what I used) -or- 8 cups water
1 medium potato, chopped
1 carrot, chopped
1 stalk celery, chopped
1/2 medium sized red onion, chopped
2 Tbs. olive oil
2 bay leaves
1 1/2-2 tsp. salt
2 tsp. vinegar
Soup Pot: mix all ingredients except for the vinegar in a soup pot and cook until lentils are done; approx. 1 hour. Add the vinegar at the end.
Crockpot: same thing but cook on LOW for 4-6 hours or on HIGH for 8-10 hours.
Yield: 8 servings
Note: I also added a good bit of black pepper, garlic powder, parsley flakes, a bit of cumin powder and a touch of dill seeds to kick it up a notch.
